Bariatrics is Dr. Tom’s passion! He was drawn to bariatrics because of the potential it had in significantly improving or altogether eliminating his patients’ diabetes. His passion grew from there: “I love it when, six months later, I’m seeing people back in the office… and they’ve lost 60, 80, maybe even 100 pounds and are no longer taking their diabetic medications or they’ve gotten rid of their sleep apnea machine and they’ve gotten rid of their high blood pressure medications. And they’re out there hiking, traveling, or doing whatever and they’ve really ‘blossomed’ as people.” Over the last 15 years of specialized experience, he has helped hundreds of patients suffering from not only diabetes, but everything from knee pain and depression to sleep apnea and heart trouble. As an innovative surgeon, he often finds new, better, and more efficient tools and practices that allow him to operate more safely, comfortably, effectively, and cost-effectively.



Matthew E. Apel, MD completed his residency in General Surgery at the University of Arizona. He then joined the Division of General Surgery/Section of Minimally Invasive and Robotic Surgery at The University of Arizona as a Clinical Fellow. During his fellowship, he further developed his skills in advanced bariatric surgery procedures. He is also certified in using the robotic da Vinci Surgical System as a Console Surgeon. Dr. Matt’s passion for bariatric surgery is rooted in his desire to help patients’ not only improve, or resolve, many of their medical conditions, but also boost their self-esteem, quality of life, and overall happiness. He feels that it is an honor and a privilege to be part of each patient’s journey to a new, happier you! He regularly attends meetings and conferences to make sure he provides you with state-of-the-art quality and care. At home, he is further blessed with a beautiful family: his wife, Christine, two kids, Eliana and Elijah, and two dogs, Charlie and Blue.

Q: What made you decide to get into the medical field and choose bariatrics as your specialty?
A: The first year after college I was working in medical research – I was working alongside a group of anesthesiologists and that’s when I realized how much I love being in the OR. In my opinion, the bariatric specialty has the most versatile skillset that you can get from general surgery! That incredible skillset, combined with my own personal weight struggles growing up, I can really relate to these patients, so it seemed like an obvious fit to choose bariatrics as my path!

Q: What is the most rewarding part of your job?
A: I love being in the OR, but I truly love connecting with people in the clinic. To be able to see what our client’s struggles are and their desire to make this life changing choice is incredibly rewarding and I feel like I am making an impact on their lives!

Q: Why Blossom Bariatrics?
A: After meeting the team during my first visit, I felt like it clicked. The team is so supportive, genuine and enthusiastic about their mission! I’m excited to be a part of the best bariatric clinic and surgery center in North America!

Q: Did you ever think you would live in Las Vegas? What do you think about it?
A: We’ve always loved Vegas for multiple reasons! We love the outdoor lifestyle it has to offer! Plus, my wife’s family lives here so it’s awesome to plant our roots here with family close by.

Q: What do you like to do in your free time, when you have some?
A: We have 3 kids and two rescue dogs, so most of our free time is spending quality time with family! We like to stay active and personally I love to train for triathlons and keep active.

Q: What’s something that most people don’t know about you?
A: I was a mascot for a summer for the Texas Rangers! They were looking for someone to fill in and gave me the opportunity since I fit the costume – PLUS it paid triple than what I was getting paid before, so I said, ‘why not’!



Q: What made you decide to get into the medical field and choose bariatrics as your specialty?
A: I decided to dedicate my career to bariatric surgery during my final year of general surgery residency training. While initially moving toward surgical oncology I was fortunate to spend an elective rotation with bariatric surgeon Dr. Emma Patterson in Portland, OR. When I saw the positive impact on patients, happy clinics, career satisfaction, technically challenging cases and overall fun practice I changed paths to a fellowship in bariatric surgery and never looked back. I understand and empathize with what our patients go through and it is a privilege to help them improve or resolve multiple medical conditions (reversing diabetes overnight never gets old!), get more active with family and friends and to frequently have a renaissance in life. The highlight of my career has been the patient interactions which I cherish greatly. I enjoy working closely with the entire team in a fast-paced environment to deliver exceptional care.

Q: Where did you go to school? Did you complete a fellowship? Tell me about your career in bariatrics? How many cases have you completed over the course of your career?
A: Undergraduate – BSc Anatomy – University of Saskatchewan, Saskatoon SK, Canada Medical school – University of Saskatchewan, Saskatoon SK, Canada General Surgery Residency – University of British Columbia, Vancouver BC, Canada Fellowship (Advanced Laparoscopic and Bariatric Surgery) – Legacy Health System, Portland OR

Board certified (Royal College of Physician and Surgeons of Canada – RCPSC) I am also a Fellow of the American Society for Metabolic and Bariatric Surgery (FASMBS)

Practicing bariatric surgery in Minneapolis for over 10 years prior to joining Blossom. Have completed over 2000 bariatric cases.

Q: What is the most rewarding part of your job?
A: The ability to tailor a program to meet individual patient’s needs. It is important to understand each patient’s unique situation to help lead them to the most successful outcomes possible. I enjoy challenging cases and watching postoperative patients literally transform before our eyes! When I consider my greatest success as a bariatric surgeon it’s difficult to choose only one thing. I consider seeing my patients succeed my success also. Patients regaining their health and leading active fulfilling lives is really what bariatric surgery is all about.

Q: Why Blossom Bariatrics?
A: I have seen Blossom Bariatrics and Dr. Umbach’s vision evolve over time. It is a very unique patient-centered practice with a phenomenal multidisciplinary team. I had been interested in the Blossom practice for many years and everything fell into place allowing the opportunity for me to join. This is my dream job!

Q: Did you ever think you would live in Las Vegas? What do you think about it?
A: Las Vegas has always been one of my favorite cities which offers everything from fantastic weather and scenery to outdoor activities to world class entertainment. My husband lived here previously and is thrilled to escape the frozen tundra. Canada will always be home but Las Vegas is where I was meant to be.

Q: What do you like to do in your free time, when you have some?
A: I enjoy travel, music, cycling, boxing, lifting weights and spending time with my 2 daughters ages 12 and 14.
